Not Just for Breakfast Anymore


From an article in the December 2011 issue of Catersource Magazine, we learned that waffles are not just for breakfast anymore. Jack Milan, owner of Different Tastes Catering in Boston, is serving waffles for brunch, lunch, dinner and hors d'oeuvres. He uses a waffle iron for mini-waffles or cuts larger ones into wedges. The basic waffle recipe can be adapted by adding spices and herbs to the batter - curry; a combination of cumin, chopped chipotle, and fresh chopped cilantro; or rosemary, parsley and Gruyere cheese.
His waffle offerings include: Fish Taco Waffles, Braised Brisket on Garlic Herbed Waffles, Five Spice Shrimp and Rice Waffles, Barbecue Waffles, and Vegetable Tagine Wafffles. Recipes can be found on Catersource's website.
I love this idea for a new hors d'oeuvre that hasn't been seen yet, or for a food station at a wedding - or maybe a midnight snack for guests? If you want to add a station for a mini Midnight beakfast for your guests, tomorrow we'll post more pictures of cute interpretations of breakfast food.
